Entree

  • Roasted beetroot, fig and midi-cress salad with walnuts, goats curd and caramelised balsamic
  • Aoraki hot smoked salmon with pistachio herb pesto, edible flowers, green pea dust and dill oil
  • Trio of tastes – hot smoked salmon & watermelon salsa, coriander & chilli prawns and seared tuna with wasabi mayo
  • Clevedon Valley buffalo mozzarella, basil and a trio of tomatoes – vine ripened, cherry and oven-roasted tomatoes with vinegar & shallot pearls

Main

  • Dill & caper crusted hapuka with micro greens, citrus & herb butter sauce
  • Pancetta & goats curd chicken with beetroot puree and baby coriander shoots
  • Pistachio, herb & parmesan crusted rack of lamb with a pea, spinach & lemon crush
  • ‘Holy Cow’ eye fillet of beef with chilli, raw sugar & soy jus
